Wow, what a busy week this has been! All of my vegetable seeds are finally here PLUS I got a huge assortment of new succulents. (Woo!) I planted most of the succulents yesterday (I’ve got a really neat post planned for those) and I repotted my old ones with fresh soil.

The directions for NeoCell Derma Matrix Collagen Skin Complex are simple. Dissolve one scoop in water or juice and take on an empty stomach. Easy peasy! You can also add it to your smoothie like I did for this yummy Chia Pudding Parfait. As a matter of fact, you may have noticed that I used it in my Acai Smoothie Bowl video earlier this week!

For the top part of the parfait, I used pretty much the same recipe as my acai smoothie bowl except for I added in extra yogurt and did away with the ice. I kept the Welch’s 100% Grape Juice, acai puree, and frozen banana.
Making chia pudding is super simple. Mix together some milk, vanilla, and a sweetener, then add in some chia seeds – that’s pretty much it. The best and most common ratio is 1 cup of milk to 3 tablespoons of chia seeds. I used Ludberg Farms Organic Brown Rice Syrup to sweeten it up a bit, but you could also use honey or maple syrup. Once everything is combined, stick it in the fridge overnight so that the little chia seeds can thicken up. (Note: stir it once during the first 10 minutes in the fridge to prevent clumping).
In the morning, spoon some of the vanilla chia pudding into a cute mason jar, drinking glass, fish bowl, whatever suits your fancy and stick it back in the fridge while you make your smoothie. Once that’s done, pour it over your chia pudding and you’re ready to enjoy!
Just don’t forget the fresh fruit, shredded coconut and [mandatory] sprig of mint!

Chia Pudding Smoothie Parfait
For the Vanilla Chia Pudding:
- 1 cup milk
- 3 tablespoons chia seeds
- 1-2 tablespoons brown rice syrup, honey, or maple sypup
- 1/2 teaspoon vanilla bean paste
For the Berry Smoothie:
- 1/4 cup Welch's 100% Grape Juice
- 1/4 cup of vanilla yogurt
- 1 frozen acai berry packet
- 1 frozen banana
- 1 cup frozen raspberries
- 1 scoop collagen powder
For the Vanilla Chia Pudding:
- In a small bowl, whisk together the milk, vanilla, and liquid sweetener of your choice. Stir in the chia seeds and place in the refrigerator.
- Wait 10 minutes and stir the mixture again. Let chill overnight.
For the Berry Smoothie:
- Add the Welch's 100% grape juice to the pitcher of a blender.
- Add the yogurt, frozen acai packet, banana, raspberries, and collagen powder.
- Mix until smooth.
For the Parfait:
- Spoon the chia pudding in the bottom of a glass or mason jar.
- Pour over your smoothie.
- Add fresh fruit, granola, chia seeds, shredded coconut, etc.
Keep things clean: Break up the acai packet with the heel of a chef's knife before cutting it open. It will help keep your fingers clean and also makes it easier on your blender!
