Okay y’all – I’m gonna keep it 100% real with ya. When I first heard about these Garden Lites Chocolate Muffins, I was a tad bit skeptical. Don’t get me wrong, I LOOOVE my chocolate muffins, but take away the gluten and dairy – and add carrots and zucchini – then I start to get a little nervous. Did I mention 1/3 of the ingredients are vegetables?
Well, I’m here to tell you that all that worry was for absolutely nothing! These little bites of fudgy heaven honestly reminded me of a big ol’ slice of chocolate pound cake at a church supper. No joke.
Garden Lites Chocolate Muffins may have passed my test (I’ll eat pretty much anything sweet), but will they fly with the hubs?

With summer right around the corner, we have both decided we needed to start eating just a bit more healthy. Lucky for me, that falls 100% on my shoulders since I do all the meal prep. (Did you hear the sarcasm in my voice there?)
I headed to Publix to pick up some “better-for-you” lunch options (no more homemade pasta sauce with freshly ground sausage served over a bed of al dente spaghetti with buttery crusty bread that has whole cloves of garlic baked into every bite).

After grabbing the ingredients to make various salads and tons of fresh fruit, I hit up the freezer isle – the International section to be exact – to grab a box of our challenge ingredient: Garden Lites Chocolate Muffins. Side note – these may also be located near the frozen breakfast foods as well.
There were so many flavors to choose from (the Garden Lites Blueberry Oat looked Ah-MAZING!) but I think chocolate will make for the ultimate test.
Do you see what I see? “Made with fresh zucchini & carrots.” Pretty crazy, huh? I flipped the box over to check the ingredients and sure enough, bam. There they are – zucchini and carrots are listed as the first and second ingredients.
This should be….interesting.
As I grab a few boxes of the Garden Lites Chocolate Muffins I can’t help but to think, “will he even eat these?” I’m almost certain he won’t even touch them if he KNOWS the main ingredients are vegetables!
Gotta keep this one a secret….but only until he tries them, then we can tell him. *wink*
Let’s Make Lunch:
I’ve had this adorable Bento box for a while now but I think we’ve used it maybe once. It’s about to get broke in tho – serious talk. I’ve already started pinning cute (but manly) bento box ideas but no matter which one I choose, I’ve gotta be sure to leave room for our “secret ingredient”.
Garden Lites makes everything from muffins and waffles to souffles and superfood veggie cakes. All of their products are made with clean, simple ingredients that have vegetables listed as the first ingredients. I love that I can just grab one of the individually wrapped chocolate muffins from the freezer and pop it right into his lunch box (it’s thawed by the time he eats it!)
Did you know that it’s super common for bakeshops to freeze their un-frosted cakes? A full day is spent making nothing but plain cakes that are pulled from the freezer when the order comes in for it to be frosted, like for a birthday. This not only saves a ton of time, it also keeps them super fresh too. As a matter of fact, I freeze pretty much all my extra baked goods so it only makes sense that Garden Lites does too! It’s the best way to preserve them without having to chemically “preserve” them!

You seriously can’t see any vegetables in these things. I’m almost wondering if they are realllllly in there?? I mean, I know they *are* but they sure don’t taste like it!
